JALEBI


INGREDIENTS-
2 cups- all purpose flour (Maida)
1 tsp- baking powder
edible colour - a pinch
1 1/2 cup - sugar
5- cardamon
Oil
water

RECIPE--
mix maida and baking powder. add 1 1/2 water and make a batter. there should be no lumps.
keep aside batter for 4-5 hours.
make sugar syrup with cardamon,sugar and equal quantity of water.

check consistancy. batter should neither be thick nor runny.
put the batter in plastic ketchup bottle.

heat oil in a kadai.
make jalebi shapes in hot oil with the help of ketchup bottle. but the flame should be low.
put jalebis in sugar syrup for 1 min.
serve hot.

Bread n Bhaji


ingredients-
(serve- 4)
potatoes- 3 (boiled and mashed)
green peas- half cup
capsicum-2
cauliflower- half
onions- 2 medium (chopped)
tomatoes- 4 medium (mashed)
green chillies- 4
garlic flakes- 2 (crushed)
ginger garlic paste- 1 tsp
pav bhaji masala- 1.5 tsp
vinegar- 1/2 tsp
butter-100 grams
salt
garam masala- 1/2 tsp
Red edible colour- a pinch
bread slices- 8

recipe-

 boil cauliflower, peas and capsicum.
drain water. blend it a bit with hand blender.
heat oil in pan. put crushed garlic flakes and chopped onions. stir fry till golden brown.
add ginger garlic paste and cook.
add mashed tomatoes and cook for 2 mins.
put salt, green chillies, garam masala, edible colour, vinegar and pav bhaji masala. mix well.
add mashed potatoes and veggies and mix thoroughly.
slow down the flame. 
put small amount of butter and mash with potato masher.
repeat this action 3 times. mash till all the ingredients mix well.
put a cup of water. cover with a lid. cook on low flame for 2-3 mins.

meanwhile roast bread slices with the butter on a tawa.
serve your yummy dish with mint chutney and onion rings.



Yummy Pasta

ingredients-

half packet- PASTA
1 onion
1 capsicum
1 tomato
1 green chilly
half teaspoon ginger garlic paste.
salt
Oregano seeds (ajwain)
oil

Recipe-
put water in a pan, add few drops of oil and pinch of salt.
boil pasta in this water.

cut capsicum and onion in rings.
heat oil in a pan. put oregano seeds and let them splutter.
add capsicum and onion rings. saute for 3 mins.
put ginger garlic paste and cook.
add mashed tomato,salt and chopped green chilly. cook for a while.
check tenderness, add boiled pasta, mix it well and cover it with lid.
turn off flame. leave it on gas for a while.
serve hot with ketchup or mayonnaise.

Stuffed potato (Baked)

ingredients---
potato- 4
lemon juice- 1tsp
salt
chopped onion- 1
boiled green peas- half a bowl
chopped tomato -1
1 green chilly
mozzarell cheese
oil
ketchup


Recipe--

peel potatoes, cut them into 2 pieces lengthwise , scoop them.
take a bowl full of chilled water. put your scooped potatoes in the water. keep aside for two hours.
after two hours, drain water and dry your potatoes.
mix lamon juice and salt.
grease potatoes with lemon juice from inside and outside.
bake them in microwave for 10-15 mins.
Meanwhile turn on the gas.
Stir fry boiled peas, green chilly ,chopped onion and tomato in 2tsp oil.
add salt and mix well.
fill this mixture in your baked potatoes, put some grated mozzarella upon the mixture.
bake the stuffed potatoes for 2 more mins.
enjoy your stuffed potatoes with ketchup.

shahi pulao

ingredients--
1 bowl boiled rice
2 tbs cooking oil
half tsp cumin seeds
small amount of green peas
1 bowl chopped vegetables (beans, carrot, capsicum, onion)
small amount of cashews
one chopped tomato
half tsp soy sauce
salt, red chilly powder according to taste
half tsp pulao msala

Recipe--

heat oil in a kadai. put cumin seeds and let them crack.
put peas and chopped veggies and saute for 5-6 mins.
add tomatoes and cook for a while.
put cashews, salt, red chilly powder, pulao masala and soy sauce and mix well.
add boiled rice, mix well and cook for a while.
delicious pulao is ready.

Semolina fritters (rawa pakoda)


ingredients--

3 tbs semolina (rawa/suji)
1 tsp corn flour
1 tbs curd
1 onion
edible colour (optional)
half bowl peanuts
1 tsp oregano seeds (ajwain)
salt, red chilly powder
water
cooking oil

Recipe---
soak peanuts in water for 10 mins.
Take a bowl, put suji (semolina), corn flour and curd in a bowl.
chop onions and put it in the bowl.
add soaked peanuts in the mixture, add salt, chilly and oregano and mix well.
add little amount of water and make a semi thick barter.
heat oil in a pan.
put your barter in the heated oil with the help of a spoon.
deep fry d fritters on low flame.
enjoy with ketchup or chutney.

Chana masaledar


Ingredients-

1.5 cup white chickpeas (chana)
2 tomato (mashed)
1 tsp ginger garlic paste
1 tsp gram flour (besan)
1 big onion
1 medium tomato
half lemon
soy sauce
half tsp chana msala
salt and red chilly powder.
cooking oil.

Recipe-
Soak chana in cold water for 3-4 hour.

after 3-4 hours, boil chana for 5-6 whistles in a cooker.keep aside.
take a kadai. put 3 tsp oil in it. add mashed tomato and cook it for a while.
add ginger garlic paste and cook again.
now put gram flour (besan) and mix well.
add salt, chana masala, soy sauce and chilly powder, mix well and cook for 2 mins.
add your boiled chana, mix them and cook with a cover for 4 mins on low flame.
cut your onion and tomato in thin rings. and put them in the kadai. cover the kadai again.
check if the chana are tender.
 if you find the tenderness fine, add lemon juice in it and mix well.
turn off the gas. leave the kadai covered for some time.
your yummy dish is ready, you can eat them with kulcha, bread or chapati. taste best with mint chutney.

cheese chilly


Ingredients-
250 gm PANEER (cottage cheese)
4-5 capsicum
4-5 onion
1 tomato
2 tsp ginger garlic paste
pinch of edible colour
2 flakes garlic (crushed)
4 tsp maida (all purpose flour)
2 tsp corn flour
1 tsp soy sauce
half tsp chilly sauce
cooking oil
salt

Recipe-
cut Paneer into cubes and onion and capsicum in big pieces.
Take a bowl, put maida, corn flour, pinch of salt, edible colour and one tsp ginger garlic paste.
Add small amount of water to make a semi thick batter.
heat oil for frying paneer cubes.
Dip paneer cubes in the batter and fry them. keep the fried paneer cubes aside.

Take another pan. heat small amount of oil in it.
put crushed garlic flakes in it and let them turn golden brown.
add 1 tsp ginger garlic paste and fry it for few seconds.
add capsicum and onion and saute for 2-3 mins on medium flame.
mash tomato with hand and  put it into the pan.
mix them in the pan and cook for 1 min.
add soy sauce and chilly sauce, mix it well.
now put your paneer cubes in the pan, mix them with other ingredients.
cook for a min. and your yummy cheese chilly is ready.
Serve it as a snack or  dry vegetable.

Roti chilla


Don't waste your leftover chapatis, turn them into an interesting yet quick evening tea snack.

ingredients-
chapatis (rotis)
half cup  Besan (gram flour)
finely chopped vegetables (onion, capsicum and carrot)
1 finely chopped tomato
salt and red chilly powder
cooking oil

recipe-
put besan in  a bowl. add salt and chilly in it.
now add chopped veggies and chopped tomato in the mixture.
add small amount of water to make  a semi thick batter.

heat up tawa. grease your tawa with few drops of cooking oil.
flame should be low.
place a chapati on the tawa.
apply a thin layer of batter on chapati.
turn your chapati and let the batter cook.
apply batter on the other side too.
turn your chapati again.
cook till the batter gets crisp from both the side.
SERVE HOT WITH EVENING TEA.

chatpata corn


ingredients--

1 bowl corn
1 onion and 1 tomato (chopped)
small amount of tamarind
salt and red chilly powder
cooking oil- 2 spoons

recipe--
soak tamarind in cold water. keep aside for half an hour.
boil corn till they soften down.

heat oil in a pan.
fry onion and tomato.
put salt and red chilly according to your taste.
separate tamarind seeds from water.put this water in the pan.
add boiled corn. mix it well. cook it until the water dry off.
serve hot.

fried veggie DALIA


THIS RECIPE IS DEDICATED TO MY ONE YEAR OLD SON...

INGREDIENTS--
1 bowl DALIA
1 bowl chopped vegetables (onion, capsicum, french beans, cauliflower etc.)
1 tomato mashed
salt, red chilly powder, turmeric, garam masala)
cumin seeds
cooking oil (2 tablespoons)
2 bowls water

recipe-
heat a pan. roast dalia without oil. when it turns golden add water. cover with a lid.
cook it on medium flame till the water dry off.
take another pan.
heat oil. add cumin seeds.let them splutter.
add chopped vegetables and let them cook.
add mashed tomato and cook again.
when veggies are done. add dalia and cook for another 2 mins so that dalia and veggies mix well.
serve hot with RAITA.

Roasted/ Fried stuffed IDLI


INGREDIENTS-

2 cups - suji (rawa)
1 cup - curd
1 medium onion (chopped)
1 medium tomato (chopped)
small amount of peanuts (halves)
Eno fruit salt
salt and red chilly powder (according to taste)
edible colour (optional)
cumin seeds(jeera)/ mustard seeds (rai)
cooking oil

recipe-
mix suji and curd. keep it aside for an hour.
after 1 hour. add half spoon Eno, salt, red chilly power and a pinch of edible colour to the batter.
If your batter is very thick.add some water to make it semi thick.
Take your idli stand. grease all the holes with oil.
fill half of the idli hole with batter.
place small amount of chopped onion, tomatoes and peanut halves on the batter.
again put your batter on above ingredients to fill the complete  idli hole.
Steam your idlis in idli stand placed on water filled utensil in microwave or cooker.
when your idlis are done. cut each idli into two pieces.
take a pan. roast mustard seeds or cumin seeds.
put your idli pieces into the pan and roast them on low flame. you can sprinkle few drops of oil to
get a glossy look.
serve hot with tomato sauce, coconut chuttny or sambar.

FRIED VERSION-

If you are not diet conscious, you can deep fry the idlis.

Paneer MANCHURIAN


INGREDIENTS-
1 bowl mashed paneer
2 finely chopped onion
1 shredded capsicum
2 spoon all purpose flour (maida)
2 spoon corn flour
2 finely chopped green chillies
3 flakes garlic (crushed)
1 tomato
soya sauce
salt
cooking oil

ingredients-
mix mashed paneer, 1 chopped onion and shredded capsicum in a bowl.
add maida and half of the corn flour and a pinch of salt mix well.
make small balls of the mixture.
fry these balls on low flame till they turn brown in colour.
set the fried balls aside.
take 2 cups of cold water and dissolve the rest of corn flour in water. keep aside
Heat two spoons of oil in a pan.
put the rest of chopped onion, green chillies and crushed garlic.
cook for two to three mins.
put corn flour mixed water in the pan.
add salt and soya sauce.
wait until the bubbles start coming out.
add Manchurian balls in the mixture.
cook for another min. serve hot with fried rice.

Paneer Bhurji Sandwich.


I was lucky as i had the leftover Paneer Bhurji that i used for my yummy sandwiches,,

ingredients

for paneer bhurji -
2 onions
1 tomato
a bowl of cottage cheese (paneer)
cumin seeds
salt, turmeric, red chilly powder and garam masala according to taste
oil for cooking

for sandwiches-
tomato ketchup
6 bread slices
mozzarella cheese (optional)
potato chips (LAYS) (optional)

recipe-

heat oil in a pan. put cumin seeds in it.
add chopped onion and let them turn golden brown.
add chopped tomato n cook .
put salt, turmeric, red chilly power n garam masala.
add mashed cottage cheese n cook for 2-3 min. your bhurji is ready. keep aside.

Take a bread slice. apply a thin layer of  tomato ketchup on the slice.
put 3 to 4 potato chips evenly on the slice. (if you dont want to use chips you can skip this step)
put two spoon of  your paneer bhurji on the chips.

put a little amount of shredded mozzarella cheese on bhurji cover it with another bread slice.((if you dont want to use cheese you can skip this step)
make another sandwich in the same way.
cook them in the sandwich maker.
enjoy your yummy sandwiches with tea or coffee.

Tangy Corn Macaroni (Low Fat)



Ingredients--
Macaroni- half packet
corn- 1 small bowl
onion- 1 medium in size
tomato- 1 medium in size
lemon juice- 1 teaspoon
green chillies- 2 finely chopped
salt to taste
dry mango powder (aamchoor)- about a pinch
red color (edible) OR turmeric - a pinch

Recipe--
Boil corn and set aside.
Boil Macaroni with a pinch of salt and a pinch of red edible color / turmeric. Keep aside.
Heat up a pan with just few drops of cooking oil.
put boiled corn and chopped onion. toss them for a while.
add chopped tomato,aamchoor and green chillies and cook it for a min.
add boiled macaroni and toss for a while.
turn of the flame and add lemon juice.
your TANGY CORN MACARONI is ready.

best for diet conscious people. can be taken as an evening snack.

VEGETARIAN FRENCH TOAST


Ingredients:
Bread-4 slices
Rava/Sooji-1/2 cup
Onions chopped-a handful
1/2 Tomato chopped finely

1/4 cup water
Green chilli chopped
Coriander leaves chopped-1 tbsp
Salt to taste
pinch of Turmeric powder

recipe

Mix sooji, salt and turmeric,water to make a thick batter. do not mix water in it..
add finely chopped onion, tomatoes, green chillies and coriander leaves in the batter and mix nicely.
dip bread slices in the batter .
heat up the tawa.
put 1/2 spoon oil on the tawa.
 put your coated bread slice on the tawa.
Add few drops of oil along the edges. Cook on medium flame for about 2 minutes from both sides.
wait till its turns out golden brown.
Serve with ketchup or tea.

    4 to 6  bread slices (better to go with brown bread)   
    1 chopped onion  
    a small bowl of , beans, capsicum and other veggies of you choice                      
     2 green chillies chopped
    small amount of peanuts
    tomato ketchup 1 tablespoon
    Turmeric Powder       : 1/2 teaspoon
    Black mustard Seeds  : ½ teaspoon
    Cumin seeds               : ½ teaspoon
    Salt according to taste
    oil for cooking
    coriander leave to garnish            

    Recipe
    cut bread slices in small pieces

    Heat the pan and add oil to it.
    Add mustard seeds and cumin seeds in heated oil and leave for 30 seconds.
    Add chopped onion and peanuts to pan and fry until it turns light yellow.
    add chopped veggies and wait till they soften down
    Add chopped green chili, all the spices and tomato ketchup ,mix it well.
    put bread pieces in it
    Sauté it for 2 minutes until all the ingredients are mixed properly
    garnish your dish with coriander leaves
    Now your veggie bread delight  is ready to be served. You can have it as a healthy breakfast or as a snack.

    vegetable POHA

    I'v always been a poha lover. its the easiest, quickest and a healthy snack n the most important thing is that it does'nt need specific ingredients. so i want to share this nice recipe with you.
     





    Ingredients-
    200 gm poha (chidva)
    1/2 tsp turmeric powder
    Salt to taste
    50 gm peanuts
    1 small chopped capsicum
    Small amount of chopped cauliflower
    9-10 French beans (round cut)
    1/2 tsp mustard seeds/ cumin seeds
    2 tsp fresh peas
    1/2 small onion, chopped
    1 small bunch of chopped coriander
    2 tbsp oil
     
    recipe
    put poha in a bowl, wash it twice and strain the water
    heat oil in a pan
    add cumin/ mustard seeds and peanuts in heated oil
    add salt and turmeric
    when peanuts turns golden, put all the chopped veggies in it
    wait till the veggies soften
    add your poha and cook it for 2 mins on low flame
    garnish your poha with coriander 
    enjoy it with tomato ketchup..

    1 Lemon juice
    1/2 tsp. turmeric powder

    1 bowl onion, tomato, capsicum(finely chopped)
    cumin seeds (bhuna jeera) to garnish

    recipe
    •  add gram flour (besan), Curd and water to make a thick batter
    • Add salt and set aside for 2 hours covered with a lid.
    • mix ginger paste, salt , lemon juice and turmeric to the barter
    • add eno fruit salt and mix well
    • put the barter in all the parts of idli stand
    • put some of the chopped vegetables on each part.
    • cook it for 3 to 4 mins in microwave.
    • garnish it with bhuna zeera
    • eat it with tamarind chuttny or tomato ketchup...
