Nutri Mazedar


Ingredients-
1 bowl boiled nutrela chunks
2 medium onion
3 big tomatoes
one small onion (rings)
4 cloves of garlic
half cup curd

salt, chilly powder acc to taste
pinch of red edible colour
1/2 tsp garam masala
musterd oil
chopped coriander leaves

recipe-
make a fine paste of onions,tomatoes and garlic
heat musterd oil in a pan
add the paste into the oil
cook till the paste is dark brown
add salt , chilly powder, garam masala and edible colour in it. mix well
add boiled nutrela and saute for 3-4 min.
add curd and onion rings. cook for 2 mins.
add a little water and cook till water dries off.
garnish with chopped coriander.

serve hot with Kulcha or Nan.

Rava Upma


Ingredients
1 cup Sooji
2 tbs ghee
salt, pepper acc . to taste
bowl of vegetables of your choice
chopped coriander

Recipe-
Heat Ghee in a pan
roast sooji in the ghee till golden brown

take another pan
heat a little ghee in it
saute veggies till tender and soft

set aside

add two cup of  hot water in roasted sooji
add veggies, salt and pepper
cook till dry.
garnish with chopped coriander.

fried vegetable khichri



ingredients-
a big bowl full of leftover khichri
a small bowl of raw vegetables (capsicum, carrot, beans,mashrooms etc.) (cut in small pieces)
some green peas
one onion (nicely chopped)
cumin seeds
salt, chilly powder, turmeric,garam masala
1/2 tsp soya sauce
1 tbs cooking oil

recipe-
heat oil in a pan.
crackle cumin seeds.
add onions and fry till golden brown.
add peas and all veggies.
add all dry spices and mix well.
let the veggies cook nicely.
when the veggies are done. put some soya sauce and mix.
add your khichari and mix thoroughly.
cook for a minute, garnish with fresh coriander.
serve hot.

mashroom masala


ingredients-
500 gms mashroom (cut into small pieces)
2 big onions
3 big tomatoes
1 tsp ginger garlic paste

salt, chilly, turmeric according to need
half spoon kitchen king or chicken masala
1/2 garam masala
fresh coriander
cooking oil

recipe-
make a fine paste of onion and tomatoes.
heat oil in a pan.
put ginger garlic paste and onion tomato paste in it.
cook till oil separates.
add all dry spices and mix well.
add mashroom and mix well.
add a cup of water and cook on medium flame.
check if the mashrooms are soft and water dries off.
garnish with coriander.
serve hot.

crunchy NAMKEEN MATAR (TEA TIME SNACK)


ingredients-
1 cup maida
1/2 cup aata
1 tbs oil
1/2 tsp salt
1/2 tsp ajwain
oil for frying




recipe-
mix both flour , salt and ajwain
add water and knead into a semi soft dough
take small amount of the dough and roll a chapati.
cut long strips out of the chapati.
fry on low heat till brown.
repeat the procedure with rest of the dough.
store in air tight container.

shahi paneer

ingredients-
paneer- 500 gm (cubed)
2 onions
2 tomatoes
1 1/2 cup fresh cream
20 cashew nuts
2 cardamoms
salt, red chilly powder (to taste).
turmeric (a pinch)
fresh coriandar leaves.
cooking oil

recipe-
make paste of cashews. set aside.
shallow fry paneer cubes. keep aside
blend together onions, tomatoes and make a fine paste.
heat oil in a pan.
put cardamoms and let them change their colour to brown.
take them out.
now put onion tomato paste and fry till oil separates.
add spices and mix well.
add cashew paste and mix thoroughly.
put cream , mix and add cubed paneer.cover and  let it cook for 2-3 mins.
add half a cup water and cook for a min again.
cover and let it stay for 5 mins.
garnish with fresh coriander leaves and serve.
